Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 3 cups marinara sauce
  • 2 cups chopped spinach
  • 1 cup sliced mushrooms
  • 1 cup zucchini, sliced
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté the mushrooms, bell pepper, and zucchini until tender.
  4. Add chopped spinach and cook until wilted.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta cheese, sautéed vegetables, a third of the mozzarella, and another layer of marinara sauce.
