Elegant yet easy this Apple and Brie Stuffed Chicken features juicy chicken breasts filled with creamy brie, crisp apples, and fresh herbs, then baked to golden perfection for a restaurant-worthy meal at home.
Ingredients
4 boneless, skinless chicken breasts
1 apple (Honeycrisp or Fuji), thinly sliced
4 oz brie cheese, sliced
2 tsp fresh thyme leaves (or 1 tsp dried)
1 tbsp olive oil
1 tbsp butter
Salt and black pepper to taste
1/2 cup chicken broth
1 tbsp Dijon mustard
1 tbsp honey
1 tbsp apple cider vinegar
Instructions
1. Preheat oven to 375°F (190°C).
2. Using a sharp knife, cut a pocket into the side of each chicken breast (without cutting through completely).
3. Season the chicken inside and out with salt and pepper.
4. Stuff each breast with apple slices, brie, and a sprinkle of thyme. Secure with toothpicks if needed.
5. Heat olive oil and butter in a large oven-safe skillet over medium-high heat.
6. Sear chicken for 3–4 minutes per side until golden brown.
7. In a small bowl, whisk together chicken broth, Dijon mustard, honey, and apple cider vinegar.
8. Pour the mixture into the skillet around the chicken.
9. Transfer skillet to the oven and bake for 15–20 minutes, until chicken is cooked through (internal temp 165°F).
10. Spoon pan sauce over the chicken before serving.
Notes
Try adding a few spinach leaves inside the chicken for extra color and flavor.
Pair with roasted sweet potatoes or a crisp green salad.
Use camembert or goat cheese as a substitute for brie if desired.
