Crisp, refreshing, and full of flavor this Apple Coleslaw combines crunchy cabbage, sweet apples, and a creamy tangy dressing. Perfect as a side for BBQs, sandwiches, or holiday meals!
Ingredients
3 cups shredded green cabbage
2 cups shredded red cabbage
2 apples (Honeycrisp or Fuji), julienned
1/2 cup shredded carrots
1/4 cup thinly sliced red onion
1/3 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp honey
Salt and pepper to taste
Optional: chopped parsley or sunflower seeds for garnish
Instructions
1. In a large mixing bowl, combine the green and red cabbage, apples, carrots, and red onion.
2. In a separate bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth.
3. Pour the dressing over the slaw and toss until evenly coated.
4. Chill for 20–30 minutes before serving to let flavors meld.
5. Garnish with parsley or sunflower seeds before serving, if desired.
Notes
Use Greek yogurt instead of mayo for a lighter version.
Tastes even better the next day as the flavors blend.
