Description

Tender, flaky cod baked in a rich coconut lemon cream sauce infused with garlic, herbs, and a hint of citrus a simple yet elegant dinner bursting with tropical flavor.


Ingredients

Scale

4 cod fillets (about 6 oz each)

Salt and black pepper, to taste

1 tbsp olive oil

2 tbsp butter

3 garlic cloves, minced

1 cup coconut milk (full-fat)

1/2 cup heavy cream

Zest and juice of 1 lemon

1 tsp Dijon mustard

1/2 tsp paprika

1/2 tsp dried thyme

2 tbsp fresh parsley, chopped

Lemon slices, for garnish


Instructions

1. Preheat oven to 400°F (200°C). Lightly grease a baking dish large enough to fit the cod fillets in a single layer.

2. Pat cod fillets dry with paper towels and season both sides with salt and pepper.

3. In a skillet over medium heat, add butter and olive oil. Once melted, sauté garlic until fragrant, about 30 seconds.

4. Pour in coconut milk, heavy cream, lemon zest, lemon juice, Dijon mustard, paprika, and thyme. Stir well and simmer for 3–4 minutes to blend flavors.

5. Taste and adjust seasoning with salt and pepper as needed.

6. Arrange cod fillets in the prepared baking dish and pour the coconut lemon cream sauce evenly over them.

7. Bake uncovered for 15–18 minutes, or until the fish flakes easily with a fork.

8. Remove from oven and spoon sauce over the fillets before serving.

9. Garnish with fresh parsley and lemon slices for a bright finish.

Notes

You can substitute other white fish such as halibut, haddock, or tilapia.

For a dairy-free version, omit the heavy cream and use all coconut milk.

Serve with rice, mashed potatoes, or steamed vegetables to soak up the sauce.

Leftovers reheat beautifully in a skillet over low heat with a splash of coconut milk.
