Description
This Cherry Amaretto Tiramisu is an elegant no-bake dessert that layers fluffy mascarpone cream with amaretto-soaked ladyfingers and sweet cherry compote a perfect fusion of Italian indulgence and fruity charm.
Ingredients
**For the cherry layer:**
2 cups cherries (fresh or frozen, pitted)
1/3 cup sugar
1 tbsp lemon juice
1 tbsp cornstarch mixed with 2 tbsp water
**For the cream layer:**
1 cup heavy cream
8 oz mascarpone cheese
1/3 cup powdered sugar
1 tsp vanilla extract
**For assembly:**
1 cup brewed espresso or strong coffee, cooled
3 tbsp amaretto liqueur
20–24 ladyfingers (Savoiardi)
Cocoa powder or shaved chocolate, for dusting
Instructions
1. In a saucepan, combine cherries, sugar, and lemon juice over medium heat. Simmer 5–7 minutes until juicy.
2. Stir in cornstarch slurry and cook 1–2 minutes until thickened. Cool completely.
3. In a bowl, beat heavy cream to soft peaks. Add mascarpone, powdered sugar, and vanilla; beat until smooth.
4. Mix espresso with amaretto in a shallow dish.
5. Dip ladyfingers quickly into the coffee mixture and layer them in a dish (don’t soak too long).
6. Spread half the mascarpone cream, then half the cherry mixture.
7. Repeat layers, finishing with cream on top.
8. Dust with cocoa powder or chocolate shavings.
9. Refrigerate for at least 4 hours or overnight for best flavor.
Notes
For a non-alcoholic version, replace amaretto with almond extract mixed into coffee.
Add chopped toasted almonds for extra texture.
Best served chilled within 2–3 days.
