Description

A rich and deeply savory soup combining classic French onion flavors with fall-apart tender beef short ribs slow-simmered, beefy, and finished with melty cheese for an elevated comfort dish.


Ingredients

3 lbs bone-in beef short ribs

1 1/2 tsp salt

1 tsp black pepper

2 tbsp olive oil

3 large yellow onions, thinly sliced

2 tbsp butter

4 garlic cloves, minced

1 tbsp tomato paste

1/2 cup dry white wine

8 cups beef broth

2 tsp fresh thyme leaves

1 bay leaf

1 tbsp Worcestershire sauce

Baguette slices, toasted

1 1/2 cups shredded Gruyère cheese


Instructions

1. Season short ribs generously with salt and pepper.

2. Heat olive oil in a large pot or Dutch oven over medium-high heat.

3. Sear short ribs on all sides until deeply browned; remove and set aside.

4. Reduce heat to medium and add butter and onions.

5. Cook onions slowly, stirring often, until deeply caramelized.

6. Add garlic and tomato paste; cook for 1 minute.

7. Deglaze with white wine, scraping up browned bits.

8. Return short ribs to the pot and add beef broth, thyme, bay leaf, and Worcestershire sauce.

9. Bring to a simmer, cover, and cook on low for 2.5–3 hours until ribs are tender.

10. Remove ribs, shred meat, and discard bones.

11. Return meat to the soup and adjust seasoning.

12. Serve topped with toasted baguette slices and Gruyère cheese.

Notes

For extra richness, broil bowls with cheese-topped baguette until bubbly.

Soup tastes even better the next day.

Can be made in a slow cooker after caramelizing onions.
