These Blackberry Pistachio Dream Bars are a heavenly combination of buttery crust, creamy cheesecake layer, juicy blackberries, and a crunchy pistachio topping a perfect no-fuss dessert for any occasion.
Ingredients
1 1/2 cups crushed graham crackers
1/3 cup melted butter
2 tbsp sugar
8 oz cream cheese, softened
1/2 cup powdered sugar
1 cup whipped topping (like Cool Whip)
1 cup fresh blackberries (plus extra for garnish)
1 (3.4 oz) package instant pistachio pudding mix
1 1/2 cups cold milk
1 cup whipped topping (for topping)
1/4 cup chopped pistachios (for garnish)
Instructions
1. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
2. Press mixture firmly into the bottom of a 9×9-inch pan to form the crust. Chill for 15 minutes.
3. In another bowl, beat cream cheese and powdered sugar until smooth.
4. Fold in 1 cup whipped topping and spread evenly over the crust.
5. Scatter fresh blackberries over the cream cheese layer.
6. In a separate bowl, whisk together pistachio pudding mix and cold milk until thickened.
7. Spread pudding evenly over the blackberry layer.
8. Top with remaining whipped topping and smooth the surface.
9. Sprinkle chopped pistachios and a few blackberries on top for garnish.
10. Refrigerate for at least 3 hours or until set before slicing and serving.
Notes
Use crushed vanilla wafers instead of graham crackers for a sweeter crust.
Substitute raspberries or blueberries for the blackberries if preferred.
Keep refrigerated and consume within 3 days for best texture and flavor.
