Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon lemon juice
  • 1/2 cup cooked shrimp, chopped
  • Salt and pepper to taste
  • Paprika for garnish
  • Chopped green onions for garnish

Instructions

  1. Start by hard boiling the eggs. Add them to a pot of water and bring it to a boil. Once the water boils, cover the pot and remove it from the heat. Let the eggs sit for about 12 minutes.
  2. After 12 minutes, cool the eggs in an ice bath to stop the cooking process.
  3. Once cooled, peel the eggs carefully. Slice each egg in half lengthwise and use a spoon to remove the yolks.
  4. In a mixing bowl, add the yolks, mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, and chopped shrimp. Season with salt and pepper. Mix everything until smooth and creamy.
  5. Now it’s time to fill the egg whites! You can either spoon the mixture back in or use a piping bag for a more elegant look.
  6. Sprinkle a little paprika on top for that classic deviled egg touch and add some chopped green onions for freshness.
