- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon lemon juice
- 1/2 cup cooked shrimp, chopped
- Salt and pepper to taste
- Paprika for garnish
- Chopped green onions for garnish
Instructions
- Start by hard boiling the eggs. Add them to a pot of water and bring it to a boil. Once the water boils, cover the pot and remove it from the heat. Let the eggs sit for about 12 minutes.
- After 12 minutes, cool the eggs in an ice bath to stop the cooking process.
- Once cooled, peel the eggs carefully. Slice each egg in half lengthwise and use a spoon to remove the yolks.
- In a mixing bowl, add the yolks, mayonnaise, Dijon mustard, Cajun seasoning, lemon juice, and chopped shrimp. Season with salt and pepper. Mix everything until smooth and creamy.
- Now it’s time to fill the egg whites! You can either spoon the mixture back in or use a piping bag for a more elegant look.
- Sprinkle a little paprika on top for that classic deviled egg touch and add some chopped green onions for freshness.
