1 sheet puff pastry, thawed

2 cups butternut squash, cubed

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

2 medium onions, thinly sliced

1 tbsp butter

1 tsp balsamic vinegar

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

1/2 cup shredded Gruyère or mozzarella cheese

1 tsp fresh thyme leaves

1 egg, beaten (for egg wash)


Instructions

1. Preheat oven to 400°F (200°C).

2. Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 20–25 minutes, until tender and lightly golden.

3. Meanwhile, melt butter in a skillet over medium heat. Add onions and cook slowly, stirring occasionally, until golden and caramelized (about 20 minutes). Stir in balsamic vinegar and remove from heat.

4. On a parchment-lined baking sheet, roll out puff pastry and lightly score a 1-inch border around the edges.

5. Spread ricotta cheese evenly within the border, then top with caramelized onions and roasted squash.

6. Sprinkle Parmesan, Gruyère, and thyme over the top.

7. Brush pastry edges with beaten egg.

8. Bake for 20–25 minutes or until golden brown and puffed.

9. Cool slightly before slicing and serving.

Notes

For a festive touch, add a drizzle of honey or sprinkle of crushed walnuts before serving.

Use goat cheese instead of ricotta for extra tang.
