Description

A hearty and flavorful vegetarian lasagna, packed with fresh vegetables and layered with rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add zucchini, bell pepper, mushrooms, and sauté until softened.
  4. Add spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed vegetables, and a third of the mozzarella cheese.
  7. Repeat the layers, finishing with the last 3 noodles and top with remaining marinara sauce and mozzarella cheese.
  8. Sprinkle Parmesan cheese on top.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  10. Let cool for 10 minutes before slicing and serving.

Feel free to add your favorite vegetables or adjust the cheese amounts to your liking.
