A hearty and flavorful vegetarian lasagna, packed with fresh vegetables and layered with rich cheese.
Ingredients

- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups spinach
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add zucchini, bell pepper, mushrooms, and sauté until softened.
- Add spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 noodles over the sauce, followed by half of the ricotta cheese, half of the sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layers, finishing with the last 3 noodles and top with remaining marinara sauce and mozzarella cheese.
- Sprinkle Parmesan cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let cool for 10 minutes before slicing and serving.

Feel free to add your favorite vegetables or adjust the cheese amounts to your liking.
