A quick and easy homemade Chicken Lo Mein with tender chicken, vibrant veggies, and savory noodles.
Ingredients

- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients. Chop the vegetables into bite-sized pieces.
- Cook the lo mein noodles according to the package instructions until al dente, drain, and set aside.
- Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.
- In the same pan, stir-fry the bell peppers, carrots, and green onions until tender yet crisp, about 3-4 minutes.
- Return the cooked chicken to the skillet. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything until combined and heated through.
- Serve hot, garnished with chopped green onions or sesame seeds for an extra touch.
Notes
Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat with a splash of water or soy sauce.
