Juicy chicken breasts stuffed with sweet pears, creamy cheese, and fresh herbs a deliciously elegant main dish perfect for fall dinners or festive occasions.
Ingredients
4 boneless, skinless chicken breasts
1 ripe pear, thinly sliced
4 oz brie cheese (or goat cheese), sliced
1 tbsp olive oil
1 tbsp butter
1 garlic clove, minced
1 tsp fresh thyme (or 1/2 tsp dried)
Salt and black pepper, to taste
1/4 cup chicken broth
1 tbsp honey (optional, for drizzling)
Fresh parsley or thyme, for garnish
Instructions
1. Preheat oven to 375°F (190°C). Use a sharp knife to cut a pocket into each chicken breast, being careful not to cut all the way through.
2. Season the chicken inside and out with salt, pepper, and thyme.
3. Stuff each breast with pear slices and cheese, securing with toothpicks if needed.
4. In an oven-safe skillet, heat olive oil and butter over medium-high heat.
5. Sear the stuffed chicken breasts for 3–4 minutes per side, until golden.
6. Add minced garlic and chicken broth to the pan.
7. Transfer skillet to the oven and bake for 15–20 minutes, or until chicken is cooked through (165°F / 74°C internal temperature).
8. Drizzle with honey if desired and garnish with fresh herbs before serving.
Notes
For extra flavor, try blue cheese or gorgonzola instead of brie.
You can substitute apples for pears if preferred.
Pairs beautifully with roasted vegetables or a green salad.
