Description
A stunning sweet-and-savory chicken dish glazed with a luscious blueberry thyme sauce bursting with fresh flavor and perfect for both weeknight dinners and elegant entertaining.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper, to taste
2 cups fresh or frozen blueberries
1/3 cup balsamic vinegar
2 tbsp honey or maple syrup
1 tbsp fresh thyme leaves (plus more for garnish)
1 clove garlic, minced
1 tbsp butter
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
Instructions
1. Season chicken breasts with salt and pepper on both sides.
2. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5–6 minutes per side, until golden and cooked through. Remove and set aside.
3. In the same skillet, add garlic and cook for 30 seconds until fragrant.
4. Add blueberries, balsamic vinegar, honey, and thyme. Simmer for 5–7 minutes, stirring occasionally, until blueberries burst and sauce thickens slightly.
5. If a thicker glaze is desired, stir in cornstarch mixture and cook for 1–2 more minutes.
6. Add butter and stir until melted for a silky finish.
7. Return chicken to the pan, spooning the sauce over top. Simmer 1–2 minutes to coat evenly.
8. Serve warm, garnished with fresh thyme and extra blueberry sauce.
Notes
Pairs beautifully with mashed potatoes, wild rice, or roasted vegetables.
Substitute chicken thighs for extra juiciness.
