A fresh, protein-packed salad with creamy avocado, briny feta, and tender chickpeas tossed in a bright lemon dressing simple, satisfying, and perfect for any meal.
Ingredients
2 cups canned chickpeas, drained and rinsed
2 ripe avocados, diced
1/2 cup crumbled feta cheese
1/4 cup red onion, finely diced
1/4 cup cucumber, diced
2 tbsp fresh parsley or cilantro, chopped
2 tbsp olive oil
1 1/2 tbsp fresh lemon juice
1/2 tsp dried oregano
Salt and black pepper to taste
Instructions
1. In a large bowl, combine chickpeas, diced avocado, feta cheese, red onion, cucumber, and herbs.
2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
3. Pour dressing over the salad.
4. Gently toss until everything is evenly coated.
5. Taste and adjust seasoning as needed.
6. Serve immediately or chill briefly before serving.
Notes
Add cherry tomatoes for extra color and sweetness.
Serve as a side dish or stuff into pita for a light meal.
