Ingredients
4 cod fillets (about 6 oz each)
Salt and pepper, to taste
1 tbsp olive oil or butter
2 garlic cloves, minced
1 small shallot, finely chopped
1 cup full-fat coconut milk
1/4 cup heavy cream (optional for richness)
1 tbsp lemon zest
2 tbsp lemon juice
1/2 tsp chili flakes (optional)
1 tbsp fresh parsley or cilantro, chopped
Lemon slices for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. Pat cod fillets dry and season both sides with salt and pepper.
3. In a large oven-safe skillet, heat olive oil or butter over medium heat.
4. Add garlic and shallot; sauté for 1–2 minutes until fragrant.
5. Pour in coconut milk, heavy cream (if using), lemon zest, lemon juice, and chili flakes.
6. Simmer for 2–3 minutes, stirring occasionally, until slightly thickened.
7. Nestle cod fillets into the sauce and spoon a bit over each piece.
8. Transfer skillet to the oven and bake for 12–15 minutes, or until fish flakes easily with a fork.
9. Remove from oven, sprinkle with chopped herbs, and garnish with lemon slices before serving.
Notes
Serve with jasmine rice, quinoa, or roasted vegetables to soak up the sauce.
Substitute cod with halibut, tilapia, or salmon if desired.
Add spinach or cherry tomatoes to the sauce for extra color and flavor.
