Ingredients

  • 2 cups bowtie pasta
  • 1 pound chicken breast, cubed
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 unit lemon, juiced and zested
  • 1 teaspoon paprika

  • optional Fresh parsley, chopped for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add bowtie pasta and cook according to package instructions until al dente.
  2. In a large skillet over medium heat, melt the unsalted butter and sauté minced garlic for about a minute until fragrant.
  3. Add cubed chicken, sprinkle with salt, pepper, and paprika; cook for 5-7 minutes until golden brown.
  4. Add broccoli florets to the skillet and cook for 3-5 minutes, letting them steam slightly.
  5. Squeeze the juice and add the zest of the lemon into the pan, stirring to combine.
  6. Drain bowtie pasta, reserving a bit of water, then add the pasta to the skillet with a splash of reserved water; toss to combine and cook for an additional 1-2 minutes.
  7. Garnish with fresh parsley if desired before serving.

Notes

Best served fresh, but can be stored for up to 3 days in an airtight container. Reheat with a splash of water if needed.
