Description
Big, hearty cowboy cookies packed with oats, chocolate chips, coconut, and pecans chewy, crunchy, and loaded with classic down-home flavor in every bite.
Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups rolled oats
1 cup semi-sweet chocolate chips
1 cup shredded sweetened coconut
1 cup chopped pecans
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
3. Beat in eggs one at a time, then add vanilla.
4. In a separate bowl, whisk flour, baking soda, baking powder, and salt.
5. Gradually mix dry ingredients into wet ingredients until combined.
6. Stir in oats, chocolate chips, coconut, and pecans.
7. Scoop dough onto prepared baking sheets, spacing well apart.
8. Bake for 12–14 minutes until edges are golden and centers are set.
9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
Cookies stay chewy for days when stored airtight.
Walnuts can be used instead of pecans.
Dough freezes well for future baking.
