Ingredients
Crust:
1 1/4 cups all-purpose flour
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
Cream Cheese Layer:
8 oz cream cheese, softened
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
Cranberry Filling:
2 cups fresh or frozen cranberries
1/2 cup granulated sugar
1 tbsp cornstarch
1/4 cup orange juice
1 tsp orange zest
Crumb Topping:
3/4 cup all-purpose flour
1/2 cup brown sugar, packed
1/2 tsp cinnamon
1/4 cup unsalted butter, melted
Instructions
1. Preheat oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
2. In a bowl, combine flour, sugar, and melted butter for the crust. Press evenly into the bottom of the prepared pie dish.
3. Bake for 10 minutes, then let cool slightly.
4. Meanwhile, in a saucepan, combine cranberries, sugar, cornstarch, orange juice, and zest. Cook over medium heat until cranberries burst and mixture thickens, about 8–10 minutes. Set aside to cool slightly.
5. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
6. Spread the cream cheese mixture evenly over the baked crust.
7. Spoon the cranberry filling over the cream cheese layer, spreading gently.
8. In another bowl, combine flour, brown sugar, and cinnamon. Stir in melted butter until coarse crumbs form.
9. Sprinkle crumb topping evenly over the cranberry layer.
10. Bake for 35–40 minutes, or until the topping is golden and the filling is set.
11. Cool completely before slicing. Serve chilled or at room temperature.
Notes
For a nutty twist, add chopped pecans or walnuts to the crumb topping.
This pie tastes even better after chilling overnight, allowing flavors to meld.
Use leftover cranberry sauce instead of homemade filling for a quicker version.
Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
