Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about one minute.
  3. Add fresh spinach to the skillet, cooking until it wilts, stirring occasionally.
  4. Pour in the heavy cream and bring to a gentle simmer, cooking for one minute.
  5. Stir in crumbled feta cheese and season with salt and pepper to taste.
  6. Add the cooked gnocchi to the skillet and gently stir to coat.
  7. Serve hot, garnished with fresh parsley if desired.
