- 4 chicken thighs
- 1 cup heavy cream
- 2 tablespoons mixed herbs (thyme, rosemary, parsley)
- 4 large potatoes
- 4 tablespoons butter
- Salt and pepper to taste
- 2 cups baby carrots
- 2 tablespoons honey
Instructions
- Preheat the oven to 375°F (190°C).
- Season the chicken thighs with salt, pepper, and mixed herbs.
- Brown the chicken in a skillet over medium heat for about 5 minutes on each side.
- Add the heavy cream over the browned chicken thighs.
- Bake the skillet in the oven for 25-30 minutes until cooked and bubbly.
- Prepare the potatoes by peeling and chopping them, then boiling in salted water for 15-20 minutes.
- Mash the boiled potatoes with butter, salt, and pepper.
- Cook the carrots by boiling them until tender, then tossing with honey over medium heat for 3-5 minutes.
- Serve the creamy chicken with the mashed potatoes and honey glazed carrots, drizzling some sauce over everything.
Notes
For added flavor, sprinkle fresh parsley or thyme on top before serving.
