Description

Ingredients

  • 4 chicken thighs
  • 1 cup heavy cream
  • 2 tablespoons mixed herbs (thyme, rosemary, parsley)
  • 4 large potatoes
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 2 cups baby carrots
  • 2 tablespoons honey

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, and mixed herbs.
  3. Brown the chicken in a skillet over medium heat for about 5 minutes on each side.
  4. Add the heavy cream over the browned chicken thighs.
  5. Bake the skillet in the oven for 25-30 minutes until cooked and bubbly.
  6. Prepare the potatoes by peeling and chopping them, then boiling in salted water for 15-20 minutes.
  7. Mash the boiled potatoes with butter, salt, and pepper.
  8. Cook the carrots by boiling them until tender, then tossing with honey over medium heat for 3-5 minutes.
  9. Serve the creamy chicken with the mashed potatoes and honey glazed carrots, drizzling some sauce over everything.

Notes

For added flavor, sprinkle fresh parsley or thyme on top before serving.
