- 1 bunch broccoli, chopped
- 2 cups carrots, sliced
- 2 cups shredded cheese (such as cheddar or a blend)
- 2 cups milk
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- Salt and pepper to taste
- Bread crumbs (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, steam the cauliflower, broccoli, and carrots until just tender, about 5-7 minutes.
- In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
- Gradually whisk in the milk and bring to a simmer, cooking until thickened.
- Stir in the shredded cheese until melted and smooth.
- Combine the steamed vegetables with the cheese sauce, adding salt and pepper to taste.
- Pour the mixture into a baking dish and top with optional bread crumbs.
- Bake for 25-30 minutes or until bubbling and golden.
