Description

Crispy, juicy chicken coated in tangy dill pickle brine and Parmesan breadcrumbs a zesty twist on classic fried chicken that’s crunchy on the outside, tender on the inside, and bursting with flavor.


Ingredients

4 boneless, skinless chicken breasts or thighs

1 cup dill pickle juice (from the jar)

1 cup buttermilk

1 1/2 cups panko breadcrumbs

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp black pepper

1/4 tsp cayenne pepper (optional)

Salt to taste

1/3 cup flour

1 large egg, beaten

Cooking spray or olive oil for baking

Fresh dill and pickle slices for garnish


Instructions

1. Place chicken in a bowl or zip-top bag and pour in pickle juice and buttermilk. Marinate for at least 2 hours or up to overnight in the fridge.

2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.

3. In one bowl, whisk egg. In another, mix breadcrumbs, Parmesan, garlic powder, onion powder, paprika, pepper, and cayenne.

4. Remove chicken from marinade, pat dry, and lightly coat in flour.

5. Dip each piece in egg, then coat thoroughly with the breadcrumb mixture.

6. Arrange chicken on the baking sheet and lightly spray with cooking oil.

7. Bake for 20–25 minutes (depending on thickness) until golden brown and internal temperature reaches 165°F.

8. Let rest for a few minutes, then garnish with fresh dill and pickle slices before serving.

Notes

For extra crunch, air fry at 400°F for 12–15 minutes, flipping halfway.

Serve with ranch dressing or a creamy dill sauce for dipping.

Try adding crushed pickle chips to the breadcrumb mix for even more flavor.
