- 6 tablespoons unsalted butter, softened
- ½ cup creamy peanut butter
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ teaspoon vanilla extract
- 1 large egg
- ¾ teaspoon baking soda
- 1¼ cups all-purpose flour
- 30 miniature Reese’s Peanut Butter Cups
- Jumbo heart sprinkles as needed
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.
- In a mixing bowl, beat the softened butter, peanut butter, brown sugar, and granulated sugar until well combined.
- Mix in the egg and vanilla extract.
- Briefly mix in the baking soda, then add the flour until just combined.
- Roll the dough into 1-tablespoon balls and place one in each cavity of the muffin pan.
- Bake for 8 minutes until edges are set but centers are soft.
- Press a miniature Reese’s Peanut Butter Cup into the center of each cookie cup.
- Gently press a heart sprinkle onto each softened cup.
- Chill in the refrigerator for 10-15 minutes to set.
- Carefully remove from the pan and serve.
Notes
For best results, ensure the butter is softened for easier mixing. You can customize with different candies or sprinkles.
