Description

A flavorful and easy dish featuring lean ground beef and fresh vegetables, inspired by classic egg rolls.


Ingredients

  • 1 lb lean ground beef (85/15)
  • 1 Tbsp olive oil
  • ½ tsp fine sea salt, or to taste
  • ¼ tsp black pepper, or to taste
  • ½ medium onion, finely diced
  • 1 medium carrot, julienned or coarsely grated
  • 3 garlic cloves, minced
  • 3 cups green cabbage, thinly sliced
  • 1 tsp ground ginger
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • ½ tsp granulated sugar
  • 1 Tbsp chopped green onion (optional, for garnish)
  • ¼ tsp sesame seeds (optional, for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, stirring occasionally, until it’s nicely browned. Season with salt and pepper to your taste.
  2. Stir in the diced onion and julienned carrot. Cook for 5 to 7 minutes, or until the onion turns translucent and soft.
  3. Add the minced garlic and continue cooking for another 30 seconds, stirring constantly to avoid burning.
  4. Toss in the sliced cabbage, ground ginger, soy sauce, sesame oil, and granulated sugar. Sauté everything together for an additional 5 to 7 minutes, until the cabbage wilts and becomes tender.
  5. Once everything is cooked, remove it from the heat. If you’d like, garnish with chopped green onions and sesame seeds. Serve warm, and get ready for compliments!

Notes

Serve with jasmine rice or cauliflower rice for a low-carb option. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
