Description
An elegant and moist pistachio cake layered with luscious mascarpone frosting delicately nutty, lightly sweet, and beautifully refined for any special occasion.
Ingredients
1 cup shelled pistachios
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/2 cup milk
1/2 cup sour cream
**Mascarpone Frosting:**
8 oz mascarpone cheese, softened
1/2 cup heavy cream
1/2 cup powdered sugar
1/2 tsp almond extract (optional)
Chopped pistachios, for garnish
Instructions
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
2. In a food processor, pulse pistachios until finely ground (do not over-process into paste).
3. In a medium bowl, whisk together ground pistachios, flour, baking powder, and salt.
4. In a large bowl, cream butter and sugar together until light and fluffy.
5. Add eggs one at a time, beating well after each, then mix in vanilla extract.
6. Alternate adding dry ingredients with milk and sour cream, beginning and ending with the dry mix.
7. Divide batter evenly between prepared pans and smooth tops.
8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
10. For the frosting, beat mascarpone, heavy cream, powdered sugar, and almond extract until smooth and fluffy.
11. Frost cooled cakes, stack, and garnish with chopped pistachios for an elegant finish.
Notes
For extra flavor, add a layer of raspberry jam between cakes before frosting.
Chill the frosted cake for at least 30 minutes before slicing for cleaner cuts.
Pairs beautifully with espresso or champagne for a refined dessert presentation.
