Description
These Feta-Parmesan Roasted Stuffed Dates are the ultimate blend of sweet, savory, and nutty. Filled with creamy feta and Parmesan, then roasted until caramelized and finished with a drizzle of honey they’re an irresistible bite-sized appetizer!
Ingredients
12 Medjool dates, pitted
1/4 cup crumbled feta cheese
2 tbsp grated Parmesan cheese
1 tbsp cream cheese (optional, for creaminess)
1 tbsp chopped walnuts or pistachios
1 tsp fresh thyme leaves
1 tbsp olive oil
1 tsp honey (plus more for drizzling)
Fresh cracked pepper, to taste
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Gently slice each date lengthwise and remove the pit if not already pitted.
3. In a small bowl, mix feta, Parmesan, cream cheese, chopped nuts, and thyme.
4. Stuff each date with about 1 teaspoon of the mixture.
5. Arrange stuffed dates on the prepared baking sheet and drizzle lightly with olive oil.
6. Roast for 8–10 minutes, until the cheese is warm and slightly golden.
7. Remove from the oven, drizzle with honey, and finish with cracked pepper.
8. Serve warm or at room temperature.
Notes
Try adding a tiny piece of prosciutto before roasting for a salty contrast.
For a festive touch, drizzle with balsamic glaze and sprinkle with chopped pistachios.
Can be prepared a few hours ahead — simply reheat before serving.
