Ingredients
- Rice paper wrappers
- Lettuce leaves
- Julienned carrots
- Cucumber, sliced
- Bell peppers, sliced
- Fresh herbs (like mint or cilantro)
- Cooked shrimp or tofu (optional)
- Peanut butter
- Soy sauce
- Lime juice
- Garlic, minced
- Water
Instructions
- Prepare all your vegetables by washing them and slicing them into thin strips.
- If using shrimp or tofu, cook them according to package instructions and set aside.
- In a bowl, mix together the peanut butter, soy sauce, lime juice, and minced garlic until smooth, adding water for desired consistency.
- Dip a rice paper wrapper in warm water for about 10 seconds to soften it, then lay it flat on a clean surface.
- Place a lettuce leaf in the center, followed by sliced vegetables, fresh herbs, and cooked shrimp or tofu.
- Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
- Repeat with remaining ingredients until all rolls are made.
- Serve with the creamy peanut sauce for dipping and enjoy!
