Ingredients

  • Rice paper wrappers
  • Lettuce leaves
  • Julienned carrots
  • Cucumber, sliced
  • Bell peppers, sliced
  • Fresh herbs (like mint or cilantro)
  • Cooked shrimp or tofu (optional)
  • Peanut butter
  • Soy sauce
  • Lime juice
  • Garlic, minced
  • Water

Instructions

  1. Prepare all your vegetables by washing them and slicing them into thin strips.
  2. If using shrimp or tofu, cook them according to package instructions and set aside.
  3. In a bowl, mix together the peanut butter, soy sauce, lime juice, and minced garlic until smooth, adding water for desired consistency.
  4. Dip a rice paper wrapper in warm water for about 10 seconds to soften it, then lay it flat on a clean surface.
  5. Place a lettuce leaf in the center, followed by sliced vegetables, fresh herbs, and cooked shrimp or tofu.
  6. Fold the sides of the wrapper over the filling, then roll tightly from the bottom up.
  7. Repeat with remaining ingredients until all rolls are made.
  8. Serve with the creamy peanut sauce for dipping and enjoy!
