Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until hot.
  3. Add the steak bites in a single layer and sear for 1-2 minutes on each side until browned. Remove and set aside.
  4. Add butter to the same skillet, then add the minced garlic and cook for 30 seconds until fragrant.
  5. Add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally until tender-crisp.
  6. Return the steak bites to the skillet, coating everything in the garlic butter, and cook for another 1-2 minutes until heated through.
  7. Garnish with fresh parsley if desired and serve immediately.

Notes

Serve with rice, mashed potatoes, or a green salad for a complete meal. Store leftovers in the fridge for up to 3 days.
