- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat until hot.
- Add the steak bites in a single layer and sear for 1-2 minutes on each side until browned. Remove and set aside.
- Add butter to the same skillet, then add the minced garlic and cook for 30 seconds until fragrant.
- Add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally until tender-crisp.
- Return the steak bites to the skillet, coating everything in the garlic butter, and cook for another 1-2 minutes until heated through.
- Garnish with fresh parsley if desired and serve immediately.
Notes
Serve with rice, mashed potatoes, or a green salad for a complete meal. Store leftovers in the fridge for up to 3 days.
