Description
A soothing and flavorful chicken noodle soup infused with fresh ginger and garlic light yet comforting, perfect for cold days or when you need a nourishing, immune-boosting meal.
Ingredients
1 lb boneless skinless chicken thighs or breasts
1 tbsp sesame oil
1 tbsp olive oil
1 small onion, sliced
2 tbsp fresh ginger, grated
4 garlic cloves, minced
6 cups chicken broth
2 cups water
1 tbsp soy sauce
1 tsp rice vinegar
1/2 tsp white pepper
1/2 tsp salt (adjust to taste)
6 oz egg noodles
1 cup sliced carrots
1 cup sliced mushrooms
2 green onions, sliced
Fresh cilantro for garnish
Instructions
1. Heat sesame oil and olive oil in a large pot over medium heat.
2. Add chicken and sear lightly until just cooked on the outside; remove and slice.
3. In the same pot, add onion, ginger, and garlic; sauté until fragrant.
4. Pour in chicken broth and water, then stir in soy sauce, rice vinegar, salt, and white pepper.
5. Bring to a gentle boil and add carrots and mushrooms.
6. Reduce heat and simmer for 10 minutes until vegetables are tender.
7. Add egg noodles and sliced chicken; cook until noodles are tender.
8. Taste and adjust seasoning as needed.
9. Garnish with green onions and cilantro before serving.
Notes
Add a splash of chili oil or sriracha for heat.
Swap egg noodles for rice noodles if preferred.
Soup stores well for up to 3 days in the refrigerator.
