Tender slow-cooked chicken simmered in a sweet and savory fig jam sauce, finished with creamy goat cheese for an elegant yet effortless dinner that feels special with minimal effort.
Ingredients
2 lbs boneless skinless chicken breasts or thighs
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1/2 tsp smoked paprika
3/4 cup fig jam
1/4 cup balsamic vinegar
2 tbsp olive oil
3 garlic cloves, minced
1 small shallot, finely chopped
1/4 cup chicken broth
4 oz goat cheese, crumbled
Fresh thyme or parsley for garnish
Instructions
1. Season the chicken on both sides with salt, pepper, thyme, and smoked paprika.
2. Place chicken in the bottom of the slow cooker.
3. In a bowl, whisk together fig jam, balsamic vinegar, olive oil, garlic, shallot, and chicken broth.
4. Pour the fig jam mixture over the chicken.
5. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is tender.
6. Gently stir the sauce and spoon it over the chicken.
7. Sprinkle goat cheese over the chicken, cover, and let sit for 5 minutes until slightly melted.
8. Garnish with fresh herbs and serve warm.
Notes
Serve over rice, mashed potatoes, or polenta to soak up the sauce.
Chicken thighs yield extra-juicy results, but breasts work well too.
Leftovers keep well for up to 3 days refrigerated.
