Description
This Slow Cooker Fig Jam & Goat Cheese Chicken combines savory and sweet flavors with creamy goat cheese, rich fig jam, and tender slow-cooked chicken an effortless gourmet-style dish perfect for any night of the week.
Ingredients
4 boneless, skinless chicken breasts
Salt and black pepper to taste
1 tbsp olive oil
1/2 cup chicken broth
1/2 cup fig jam (or fig preserves)
2 tbsp balsamic vinegar
2 tsp Dijon mustard
2 garlic cloves, minced
4 oz goat cheese, crumbled
1 tbsp fresh rosemary, chopped (or 1 tsp dried)
Fresh thyme or parsley for garnish
Instructions
1. Season chicken breasts with salt and pepper on both sides.
2. Heat olive oil in a skillet over medium-high heat and sear chicken for 2–3 minutes per side until lightly golden. (Optional, but adds great flavor.)
3. Transfer chicken to the slow cooker.
4. In a small bowl, whisk together chicken broth, fig jam, balsamic vinegar, Dijon mustard, and garlic.
5. Pour the mixture over the chicken and sprinkle with rosemary.
6. Cover and cook on LOW for 5–6 hours or on HIGH for 2½–3 hours, until chicken is tender.
7. Remove chicken and stir goat cheese into the sauce until creamy and blended.
8. Return chicken to the slow cooker to coat in sauce, or serve topped with the fig-goat cheese mixture.
9. Garnish with thyme or parsley before serving.
Notes
Serve over mashed potatoes, wild rice, or roasted vegetables.
Substitute cream cheese or feta for goat cheese if desired.
Add a handful of chopped figs for extra texture and sweetness.
