Description
Decadent chocolate cookies with crisp edges and a molten, gooey chocolate center all the indulgence of a lava cake in a handheld cookie form.
Ingredients
1/2 cup unsalted butter
6 oz semi-sweet chocolate, chopped
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
8 chocolate truffles or chocolate squares
Flaky sea salt for topping
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Melt butter and chopped chocolate together until smooth; let cool slightly.
3. Whisk in brown sugar and granulated sugar until combined.
4. Add egg and vanilla extract and mix well.
5. In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
6. Stir dry ingredients into chocolate mixture until a thick dough forms.
7. Scoop dough and flatten slightly; place a chocolate truffle in the center and wrap dough around it.
8. Place cookies on baking sheet, spacing evenly apart.
9. Bake for 10–12 minutes until edges are set but centers remain soft.
10. Sprinkle lightly with flaky sea salt.
11. Cool for 5 minutes before serving warm for gooey centers.
Notes
Serve warm for the best lava effect.
Do not overbake or centers will firm up.
Dough can be chilled briefly if too soft to handle.
