2 lb baby potatoes, halved

3 tbsp olive oil

1 tsp dried oregano

1 tsp dried thyme

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

Juice of 1/2 lemon

Zest of 1 lemon

1/2 cup crumbled feta cheese

2 tbsp chopped fresh parsley


Instructions

1. Preheat the oven to 425°F (220°C).

2. Place halved potatoes on a baking sheet lined with parchment paper.
