Description

Ingredients

2 lbs Yukon Gold or Russet potatoes, peeled and cut into wedges

1/3 cup olive oil

1/4 cup fresh lemon juice

3 garlic cloves, minced

1 cup chicken or vegetable broth

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

1 tbsp chopped fresh parsley (for garnish)


Instructions

1. Preheat oven to 400°F (200°C).

2. Place the potato wedges in a single layer in a large baking dish.

3. In a bowl, whisk together olive oil, lemon juice, garlic, broth, oregano, salt, and pepper.

4. Pour the mixture over the potatoes and toss to coat.

5. Roast uncovered for 45–55 minutes, flipping halfway, until golden and tender.

6. Garnish with fresh parsley before serving.

Notes

For extra crispiness, broil the potatoes for 3–5 minutes at the end.
