Description

Ingredients

  • 1 lb. large shrimp (peeled and deveined)
  • 1 avocado (sliced or mashed)
  • 1 cup frozen corn (thawed)
  • 1/2 cup red onion (diced)
  • 1/4 cup cilantro (chopped)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • Lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Toss the shrimp in a mixing bowl with olive oil, paprika, garlic powder, salt, pepper, and cayenne (if using) until well coated.
  2. In another bowl, prepare the corn salsa by mixing together corn, diced red onion, chopped cilantro, lime juice, and a pinch of salt.
  3. Preheat the grill to medium heat and grill the marinated shrimp for about 2-3 minutes on each side until pink and opaque.
  4. While the shrimp are grilling, whisk together mayonnaise, sour cream, cilantro, lime juice, garlic, and additional salt or pepper to taste for the creamy garlic sauce.
  5. Assemble your bowl: start with a scoop of corn salsa, add the grilled shrimp, top with avocado, and drizzle with the creamy garlic sauce.

Notes

Serve with tortilla chips or garlic bread. Store leftovers separately for up to 3 days.
