Ingredients

- 1 lb. large shrimp (peeled and deveined)
- 1 avocado (sliced or mashed)
- 1 cup frozen corn (thawed)
- 1/2 cup red onion (diced)
- 1/4 cup cilantro (chopped)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- Lime juice
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Toss the shrimp in a mixing bowl with olive oil, paprika, garlic powder, salt, pepper, and cayenne (if using) until well coated.
- In another bowl, prepare the corn salsa by mixing together corn, diced red onion, chopped cilantro, lime juice, and a pinch of salt.
- Preheat the grill to medium heat and grill the marinated shrimp for about 2-3 minutes on each side until pink and opaque.
- While the shrimp are grilling, whisk together mayonnaise, sour cream, cilantro, lime juice, garlic, and additional salt or pepper to taste for the creamy garlic sauce.
- Assemble your bowl: start with a scoop of corn salsa, add the grilled shrimp, top with avocado, and drizzle with the creamy garlic sauce.
Notes
