Description
A mouthwatering grilled sandwich loaded with smoky grilled vegetables, creamy mozzarella, and a drizzle of balsamic glaze the perfect balance of freshness, crunch, and melty goodness.
Ingredients
1 small zucchini, sliced lengthwise
1 small eggplant, sliced into rounds
1 red bell pepper, cut into large strips
1 small red onion, sliced into rings
2 tbsp olive oil
Salt and pepper, to taste
1 tsp Italian seasoning
8 slices of rustic or sourdough bread
4 tbsp pesto sauce
8 oz fresh mozzarella, sliced
2 tbsp balsamic glaze (optional)
Butter or olive oil for grilling
Instructions
1. Preheat grill or grill pan over medium heat.
2. Brush zucchini, eggplant, bell pepper, and onion with olive oil and season with salt, pepper, and Italian seasoning.
3. Grill vegetables for 3–5 minutes per side until tender and slightly charred. Set aside.
4. Spread pesto on one side of each bread slice.
5. Layer mozzarella slices and grilled vegetables between two slices of bread.
6. Brush the outside of the sandwich with butter or olive oil.
7. Grill sandwiches for 2–3 minutes per side, pressing gently, until golden and cheese is melted.
8. Drizzle with balsamic glaze before serving for extra flavor.
Notes
Add fresh basil leaves or spinach for extra freshness.
Swap mozzarella with provolone or goat cheese for a twist.
These sandwiches pair beautifully with tomato soup or a simple green salad.
