- 2 Chicken breasts
- 1 can Pineapple slices
- 2 cups Coconut rice (cooked white rice with coconut milk)
- 1 tsp Salt
- 1/2 tsp Pepper
- 2 tbsp Olive oil
- 2 tbsp Soy sauce
- 2 tbsp Lime juice
- Green onions (for garnish)
Instructions
- Marinate the chicken breasts in a mixture of olive oil, soy sauce, lime juice, salt, and pepper for at least 30 minutes.
- Prepare coconut rice by cooking white rice, replacing half the water with coconut milk.
- Grill the marinated chicken over medium-high heat for 5-7 minutes on each side until fully cooked.
- Grill the pineapple slices for 2-3 minutes on each side until caramelized.
- Serve coconut rice topped with grilled chicken and pineapple, garnished with chopped green onions.
Notes
For extra flavor, marinate chicken overnight. Use full-fat coconut milk for a richer taste.
