  • 1 mango (diced)
  • 0.25 cup red onion (finely chopped)
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro (chopped)

Instructions

  1. Start by whisking together honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper. You want to create a delicious marinade full of flavor!
  2. Place the chicken breasts in a bowl or a resealable plastic bag and pour the marinade over them. Seal it up (or cover the bowl) and let the chicken marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat. Once it’s hot, cook the marinated chicken for about 6-7 minutes on each side.
  4. While the chicken is cooking, prepare the mango salsa. Simply combine the diced mango, finely chopped red onion, lime juice, and cilantro in a bowl. Give it a gentle stir to mix all those refreshing flavors together.
