- 4 chicken breasts (boneless skinless)
- 3 tbsp honey
- 2 limes (zest and juice)
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 mango (diced)
- 0.25 cup red onion (finely chopped)
- 1 tbsp lime juice
- 2 tbsp fresh cilantro (chopped)
Instructions
- Start by whisking together honey, lime juice, lime zest, minced garlic, olive oil, salt, and black pepper. You want to create a delicious marinade full of flavor!
- Place the chicken breasts in a bowl or a resealable plastic bag and pour the marinade over them. Seal it up (or cover the bowl) and let the chicken marinate for at least 30 minutes.
- Heat a skillet over medium-high heat. Once it’s hot, cook the marinated chicken for about 6-7 minutes on each side.
- While the chicken is cooking, prepare the mango salsa. Simply combine the diced mango, finely chopped red onion, lime juice, and cilantro in a bowl. Give it a gentle stir to mix all those refreshing flavors together.
- When the chicken is done cooking, serve it topped with the bright mango salsa. Enjoy each bite!
