This Honey Cranberry Chicken Bake with Ricotta Cheese combines juicy chicken, tart cranberries, and creamy ricotta in a sweet-and-savory dish that’s holiday-worthy yet easy enough for weeknights. Ready in just 40 minutes!
Ingredients
4 boneless, skinless chicken breasts
1/2 cup fresh or frozen cranberries
2 tbsp honey
1/4 cup balsamic vinegar
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 tbsp olive oil
1 garlic clove, minced
1/2 tsp dried thyme
Salt and black pepper, to taste
Fresh rosemary or parsley, for garnish
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
2. In a small bowl, whisk together honey, balsamic vinegar, thyme, garlic, salt, and pepper.
3. Place chicken breasts in the baking dish and spoon the honey-balsamic mixture evenly over them.
4. Scatter cranberries around and on top of the chicken.
5. Bake uncovered for 25–30 minutes, or until chicken is cooked through and juices run clear.
6. Remove from oven and spread a spoonful of ricotta and sprinkle Parmesan over each chicken breast.
7. Return to oven for 5 minutes to melt slightly.
8. Garnish with fresh herbs and drizzle with extra honey before serving.
Notes
For extra flavor, marinate the chicken in the honey-balsamic mixture for 1 hour before baking.
Swap ricotta with goat cheese for a tangier twist.
Serve with roasted sweet potatoes, wild rice, or a green salad for a balanced meal.
