Description
Tender green beans and carrots tossed in a buttery honey glaze this colorful and flavorful side dish is the perfect mix of sweet, savory, and fresh.
Ingredients
2 cups fresh green beans, trimmed
2 cups baby carrots (or sliced regular carrots)
2 tbsp butter
1 tbsp olive oil
2 tbsp honey
1 tbsp brown sugar (optional for extra sweetness)
1/2 tsp salt
1/4 tsp black pepper
1 tsp lemon juice (optional for brightness)
Chopped parsley or thyme for garnish
Instructions
1. Bring a large pot of salted water to a boil. Add carrots and cook for 4–5 minutes.
2. Add green beans to the same pot and cook for an additional 3–4 minutes, until both are tender-crisp.
3. Drain and immediately rinse under cold water to stop cooking.
4. In a large skillet, melt butter with olive oil over medium heat.
5. Stir in honey, brown sugar (if using), salt, and pepper.
6. Add carrots and green beans to the skillet, tossing to coat in the glaze.
7. Cook for 2–3 minutes, until glossy and heated through.
8. Add a splash of lemon juice for brightness and garnish with fresh parsley or thyme.
9. Serve warm.
Notes
For extra flavor, add a sprinkle of toasted almonds or pecans before serving.
You can substitute maple syrup for honey for a different twist.
