Instructions

  1. Prepare the Marinade: In a small bowl, mix honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk these ingredients until they combine into a smooth mixture.
  2. Marinate the Chicken: Coat the chicken breasts with the honey lime marinade, ensuring they are fully covered. Let the chicken sit for 15–20 minutes to soak in all those delicious flavors.
  3. Cook the Rice: In a medium pot, bring the chicken broth to a boil. Once boiling, add the jasmine rice, cover the pot, and let it simmer for 15 minutes until fluffy.
  4. Cook the Chicken: Heat the olive oil in a skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-7 minutes per side until they’re thoroughly cooked. Once done, remove them from the skillet, let them rest for a minute, and then slice them.
  5. Assemble the Stack: In each plate, layer the fluffy rice first, followed by the sliced chicken, diced avocado, chopped red onion, and fresh cilantro. Squeeze fresh lime juice on top for an extra zing.
