- 4 pieces Chicken Breasts (boneless, skinless)
- 3 tablespoons Honey
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)
- 1 teaspoon Ground Cumin
- Salt to taste
- Pepper to taste
- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- In a bowl, mix honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper to create a marinade. Add the chicken breasts to the marinade and let them marinate for at least 30 minutes.
- In a saucepan, bring chicken broth to a boil. Add the jasmine rice and reduce to a simmer. Cover and cook for about 15 minutes or until the rice is tender and the liquid is absorbed.
- Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade and place it in the skillet. Cook for 6-7 minutes on each side until fully cooked. Let it rest before slicing.
- In a bowl or on a plate, layer the cooked rice, sliced chicken, diced avocado, red onion, and chopped cilantro. Serve with lime wedges on the side.
Notes
Marinate the chicken longer for deeper flavor. Store leftovers in an airtight container for up to 3 days.
