Description
Sweet, spicy, and smoky this Jalapeño Peach Chicken combines juicy grilled or pan-seared chicken with a sticky peach glaze that’s brightened by fresh jalapeño and a touch of lime. A perfect summer-inspired dinner bursting with flavor!
Ingredients
4 boneless, skinless chicken breasts
2 tbsp olive oil
Salt and black pepper to taste
1 cup peach preserves (or peach jam)
1 fresh peach, diced
1 jalapeño, finely chopped (remove seeds for less heat)
2 tbsp apple cider vinegar
1 tbsp soy sauce
1 tbsp Dijon mustard
1 clove garlic, minced
1/2 tsp smoked paprika
Juice of 1/2 lime
Fresh cilantro or green onions for garnish
Instructions
1. Season chicken breasts with salt, pepper, and smoked paprika.
2. Heat olive oil in a large skillet over medium-high heat (or preheat grill to medium heat).
3. Cook chicken for 5–6 minutes per side until golden and cooked through (internal temperature 165°F). Remove and set aside.
4. In a small saucepan, combine peach preserves, diced peach, jalapeño, vinegar, soy sauce, Dijon mustard, garlic, and lime juice.
5. Bring to a simmer over medium heat and cook for 5–7 minutes, stirring occasionally, until the glaze thickens slightly.
6. Brush half the glaze over the cooked chicken and let it caramelize in the pan for 1–2 minutes.
7. Serve chicken topped with remaining glaze and garnish with cilantro or green onions.
Notes
For a smoky twist, grill the chicken instead of pan-searing.
Add a pinch of red pepper flakes for extra heat or more sweetness with honey.
Serve with rice, roasted potatoes, or grilled corn for a perfect summer meal.
