- 2 boneless, skinless chicken breasts
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- Juice of 1 lime
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and pepper to create a marinade.
- Add the chicken breasts to the marinade, coating them well, and let them marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken breasts for 6-7 minutes on each side or until fully cooked.
- Remove from the grill and let rest for a few minutes.
- Serve the grilled chicken topped with slices of avocado and cherry tomatoes, garnished with fresh cilantro if desired.
Notes
Marinate longer for deeper flavor. Use a meat thermometer to ensure chicken is cooked to 165°F.
