- 2 cups cooked chicken, shredded
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are tender, about 5-7 minutes.
- In a large bowl, combine the cooked shredded chicken, sautéed mushrooms, heavy cream, dried thyme, salt, and pepper. Mix until well coated.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
- Let the casserole cool slightly before serving.
Notes
For added flavor, consider using rotisserie chicken. Don’t skip the sautéing step for the mushrooms to avoid a watery casserole.
