Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are tender, about 5-7 minutes.
  3. In a large bowl, combine the cooked shredded chicken, sautéed mushrooms, heavy cream, dried thyme, salt, and pepper. Mix until well coated.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  7. Let the casserole cool slightly before serving.

Notes

For added flavor, consider using rotisserie chicken. Don’t skip the sautéing step for the mushrooms to avoid a watery casserole.
