Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper, and spread them out evenly on a baking sheet.
- Roast the potatoes in the oven for about 25-30 minutes or until crispy and golden, stirring halfway through.
- Meanwhile, heat a skillet over medium heat and brown the ground meat, adding taco seasoning as it cooks.
- In a large bowl, combine the roasted potatoes, sautéed meat, black beans, corn, avocado, lettuce, and tomatoes. Mix gently.
