  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 avocado, diced
  • 1 cup lettuce, shredded
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • Sour cream (optional)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes with olive oil, salt, and pepper, and spread them out evenly on a baking sheet.
  3. Roast the potatoes in the oven for about 25-30 minutes or until crispy and golden, stirring halfway through.
  4. Meanwhile, heat a skillet over medium heat and brown the ground meat, adding taco seasoning as it cooks.
