Ingredients

3 large sweet potatoes, peeled and cubed

2 tbsp olive oil

2 tbsp butter, melted

3 tbsp pure maple syrup

1/2 cup chopped walnuts

1/2 tsp ground cinnamon

1/4 tsp salt

Fresh thyme leaves (optional, for garnish)


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. In a large bowl, toss sweet potato cubes with olive oil, butter, maple syrup, cinnamon, and salt until evenly coated.

3. Spread sweet potatoes in a single layer on the prepared baking sheet.

4. Roast for 30–35 minutes, stirring halfway through, until tender and caramelized.

5. In the last 5 minutes of roasting, sprinkle chopped walnuts over the top to toast lightly.

6. Remove from the oven and drizzle with a touch more maple syrup if desired.

7. Garnish with fresh thyme and serve warm.

Notes

For extra flavor, add a pinch of cayenne pepper for gentle heat.

You can substitute pecans for walnuts if preferred.
