Description
Soft, chewy cookies loaded with sweet maraschino cherries and melty chocolate chips a fun, festive twist on the classic chocolate chip cookie perfect for holidays or special occasions.
Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 large eggs
2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 cup chopped maraschino cherries, drained and patted dry
2 cups semi-sweet chocolate chips
1–2 tbsp maraschino cherry juice (optional, for flavor and pink color)
Instructions
1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Add eggs and vanilla extract; beat until combined.
4. In a separate bowl, whisk together flour, baking soda, and salt.
5. Gradually mix dry ingredients into wet ingredients just until incorporated.
6. Fold in chopped maraschino cherries and chocolate chips. Add 1–2 tablespoons of cherry juice for extra flavor and color if desired.
7. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spacing 2 inches apart.
8. Bake 10–12 minutes, until edges are lightly golden and centers are soft.
9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Pat cherries dry thoroughly to avoid excess moisture in the dough.
For a pinker cookie, add a drop of red food coloring along with the cherry juice.
Store in an airtight container for up to 5 days or freeze for up to 3 months.
