Description
Soft, fudgy chocolate cookies filled with a gooey marshmallow center and topped with rich hot cocoa frosting a playful winter treat that melts in your mouth like a mug of hot chocolate.
Ingredients
1/2 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
12 large marshmallows, cut in half
Hot Cocoa Frosting:
2 tbsp butter, softened
2 tbsp unsweetened cocoa powder
1 cup powdered sugar
2–3 tbsp hot milk or cream
1/2 tsp vanilla extract
Mini marshmallows or chocolate shavings, for topping
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream butter and sugar together until light and fluffy.
3. Beat in the egg and vanilla extract until smooth.
4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
5. Gradually add dry ingredients to the wet ingredients, mixing until combined.
6. Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheets, spaced about 2 inches apart.
7. Bake for 8–9 minutes, then quickly press a marshmallow half (cut side down) into the center of each cookie.
8. Return to the oven and bake for 1–2 more minutes, just until the marshmallow puffs slightly.
9. Cool cookies completely on a wire rack.
10. Meanwhile, prepare the frosting: beat butter, cocoa powder, powdered sugar, milk, and vanilla until smooth and spreadable.
11. Once cookies are cooled, spread a layer of frosting over each marshmallow-topped cookie.
12. Garnish with mini marshmallows or chocolate shavings for a festive finish.
Notes
For extra chocolate flavor, stir mini chocolate chips into the dough.
You can use flavored marshmallows like peppermint for a fun holiday twist.
Store cookies in an airtight container at room temperature for up to 3 days.
If the frosting thickens, thin with a splash more hot milk before spreading.
