Description
Tender, juicy chicken simmered in a bright lemon-garlic sauce with artichoke hearts, olives, and Mediterranean herbs a one-pan dish that’s elegant, healthy, and full of flavor.
Ingredients
4 boneless, skinless chicken breasts
2 tbsp olive oil
3 cloves garlic, minced
1 cup low-sodium chicken broth
1/3 cup freshly squeezed lemon juice
1 tbsp lemon zest
1 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1 (14 oz) can artichoke hearts, drained and halved
1/2 cup pitted Kalamata olives
2 tbsp capers (optional)
2 tbsp chopped fresh parsley
Lemon slices for garnish
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat.
3. Add chicken and sear for 3–4 minutes per side until golden; remove and set aside.
4. In the same skillet, add garlic and cook for 30 seconds until fragrant.
5. Pour in chicken broth, lemon juice, zest, oregano, and stir, scraping up any browned bits.
6. Return chicken to the skillet and add artichoke hearts, olives, and capers.
7. Cover and simmer for 10–12 minutes, or until chicken is cooked through.
8. Uncover and let the sauce reduce slightly.
9. Sprinkle with fresh parsley and garnish with lemon slices before serving.
Notes
Serve over rice, couscous, or orzo to soak up the lemony sauce.
For extra richness, stir in a tablespoon of butter at the end.
